The only real difference is the amount of heat you'll be able to pump into them over sustained use. More capacity, more capability under extended/hard use. Normal use will feel and operate the same. This is something most people don't get. They assume they'll get "better pedal feel bro" by upgrading their brake size.

Having driven both, there's a noticeable difference between a manual 325i and a manual 330i. IIRC, Car and Driver got a 325i 5-speed manual sedan 0-60 time of 7.0 seconds in 2002-2003ish. For the 2003 330i ZHP, Car and Driver got a 0-60 time of 5.6 seconds with the 6-speed manual, and 6.1 seconds for the non ZHP 330i 5-speed manual.
